Ingredients
- Minted Ginger Syrup
- 1/2 cup honey
- 1 inch fresh ginger, sliced
- 8 fresh mint leaves
- Paloma
- kosher salt, for rim
- 1/4 cup grapefruit juice (about half a grapefruit)
- 1 tablespoon lime juice
- 2-4 tablespoons ginger syrup (or to taste)
- 2 ounces silver tequila (or to your liking)
- 1/2 cup pomegranate juice
- ginger beer, for topping (or sparkling water)
- pomegranate arils and candied mint, for garnish (optional)
Instructions
Ginger Syrup
Combine 1/2 cup water, the honey, ginger, and mint in a small saucepan and bring to a low boil, simmer 1 minute and remove from the heat. Cover and steep for 5-10 minutes. Strain and let the syrup cool. Store in the fridge.
!For the Drink
Rim your glass with a lime and dip in salt. Fill the glass halfway with ice. Add the grapefruit juice, lime juice, 2-4 tablespoons ginger syrup (to taste), tequila, and pomegranate juice and gently stir. Top with ginger beer. Drink
